Thai Green Curry Paste

What you need:

  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 3 tbsp finely chopped fresh lemongrass
  • 2 tbsp finely chopped fresh galangal
  • 2 tbsp ginger
  • 15 fresh green chilies (This also depends on the type you buy. Mine are usually medium strength)
  • 8 – 10 garlic cloves
  • ¼ cup roughly chopped shallots
  • ½ cup of fresh coriander leaves (along with stalk and roots)
  • 1 tsp chopped kaffir lime leaves or grated lime peel
  • ¼ cup of sweet basil leaves
  • 1 tbsp light soy sauce

Grind all the above ingredients into a thick paste without any water.  You can freeze it for up to a month too! I have used ice cube trays to freeze this paste so it’s easy to use just the amount you need, as and when you need it, rather than defrosting the whole lot.  Click here for the link to my Thai Green Curry 🙂
